  • 300 g skirt loin<\/li>\n
  • 1 medium pearl onion<\/li>\n
  • 1 clove garlic<\/li>\n
  • Salt<\/li>\n
  • 1 pinch of black pepper powder<\/li>\n
  • \u00bc cup heavy cream<\/li>\n
  • \u00bd cup of roasted and ground Minerva Reserva coffee<\/li>\n
  • 3 tablespoons cognac<\/li>\n
  • \u00bd tablespoon brown sugar<\/li>\n
  • 1 tablespoon unsalted butter<\/li>\n<\/ul>\n

    Preparation<\/h4>\n
      \n
    1. Cut the pearl onion into feathers, place a frying pan on the fire and when it is hot add \u00bd tablespoon of butter.<\/li>\n
    2. Fry \u00bc tablespoon of brown sugar until golden brown, remove from heat and set aside.<\/li>\n
    3. Cut the meat into large cubes and marinate with garlic and pepper.<\/li>\n
    4. Brown the meat with the rest of the butter, add coffee, the cream, season with salt, pepper and brown sugar, this ingredient will balance the bitterness of the coffee.<\/li>\n
    5. Finally, add the brandy, turn off the heat and serve.<\/li>\n
    6. Heat the reserved onions and serve over the meat.<\/li>\n<\/ol>\n
