Coffee cake

Ingredients:
For the cake
- 3 eggs
- 2 egg yolks
- ½ cup flour
- 1 ½ cups sugar
- 1 teaspoon of yeast
For the coffee cream
- 4 tablespoons roasted and ground Minerva coffee
- 500 gr butter
- 1 cup sugar
- 1 cup of water
Preparation
- Mix the three eggs together with the flour, baking powder and one third of the sugar to obtain the sponge cake.
- Bake in the oven for 40 minutes.
- Let stand and then cut horizontally in half.
- For the coffee cream, mix the coffee with the water and let it cool before adding the egg yolks.
- Beat the sugar with the butter until stiff and then add the coffee and egg mixture in a whirling motion.
- Cover the cake with this cream, smooth and serve as desired.
