Coffee cake

Ingredients:

For the cake

  • 3 eggs
  • 2 egg yolks
  • ½ cup flour
  • 1 ½ cups sugar
  • 1 teaspoon of yeast

For the coffee cream

  • 4 tablespoons roasted and ground Minerva coffee
  • 500 gr butter
  • 1 cup sugar
  • 1 cup of water

Preparation

  1. Mix the three eggs together with the flour, baking powder and one third of the sugar to obtain the sponge cake.
  2. Bake in the oven for 40 minutes.
  3. Let stand and then cut horizontally in half.
  4. For the coffee cream, mix the coffee with the water and let it cool before adding the egg yolks.
  5. Beat the sugar with the butter until stiff and then add the coffee and egg mixture in a whirling motion.
  6. Cover the cake with this cream, smooth and serve as desired.
