Turkey in coffee sauce

Yields for 2 persons



  • 300 g turkey breast
  • 3 tablespoons oil
  • 3 tablespoons soy sauce
  • 1 tablespoon mustard
  • 1 tablespoon of Minerva roasted & ground coffee dissolved in ½ cup of boiling water
  • 1 tablespoon of honey
  • White pepper powder
  • Salt
  • 1 clove garlic
  • 1 orange juice
  • 1 pearl onion cut in small squares
  • 2 tablespoons parsley


  1. Take two breast fillets, marinate them with finely chopped garlic, a pinch of salt, mustard, orange juice and white pepper.
  2. Let stand in a glass container for 30 minutes in the refrigerator.
  3. Stir-fry the pearl onion and turkey fillets until golden brown.
  4. Add coffee, soy sauce and honey.
    Add salt and pepper to taste.
  5. Remove from the heat when the sauce has thickened.
  6. Serve and garnish with finely chopped parsley.
